One of the oldest nuts on earth, pistachio originate from Southeast Asia, Asia Minor, Pakistan and India.br>
They are a popular snack food often used in Indian and Mediterranean cuisines. Traditionally they are used to overcome kidney and gall bladder aches and relieves cough when pounded and mixed into honey. When the pistachio fruits are ripe, their fairly hard shells split open lengthwise.

Like other nuts, pistachios are cholesterol free, high in fibre and low in saturated fat. These nuts are also a very good source of protein with a relatively low calorie value compared to other nuts. Pistachios can also cut heart disease risk as the high monounsaturated fat content help lower total and "bad" cholesterol levels in the blood.

Pistachios are also rich in potassium, which helps regulate the body's fluid balance and phosphorus which helps build bones and teeth. Pistachios contains magnesium which are important in the conversion of the body's energy. A good source of vitamin B6 and thiamine, they aid in the absorption of protein as well as enhances energy, promoting normal appetite.

Recently, the journal of American Medical Association (Nov 2002) reported that women who ate 1 ounce of nuts (like pistachios and others) reduced their risk of developing type 2 diabeties by 20 to 30 %. These may be attributed to the magnesium, dietary fibre among other nutrients in pistachios and other nuts which are known to maintain balanced insulin and glucose levels.
